Bonfire Night Loaded Baked Potatoes

There is nothing more autumnal than bonfire night. One of my favourite nights of the year, not only for the warmth that radiates from the huge fires that burn brightly, getting to spent time with family and friends, the amazing firework displays that go on around us, but also for the warming food and drinks that accompany it. This year, today the 5th November the weather has turned cold and frosty meaning one thing.....it's time to get out my Bonfire Night Loaded Baked Potato recipe.

I have been making this dish on bonfire night for as long as I can remember. Baked potatoes filled with sharp cheddar cheese, bacon and sausages then sprinkled with more cheddar and popped under the grill for a couple of minutes until the top is golden and delicious.

To make this recipe you will need...

Ingredients

  • 4 Large Baking Potatoes
  • 1 Large Onion (Diced)
  • 4-5 Rashers Of Bacon (Chopped)
  • Sausages (Cubed)
  • Cheese (For this recipe I used cheddar, but you can use your favourite)
  • Salt & Pepper
  • Butter
  • Mustard Powder

Method

  1. Pre heat oven in advance so the potatoes go into a hot oven straight away. Microwave the potatoes for around 15-20 minutes to help start the cooking process. This step is optional but I find it helps. Arrange on a baking tray and bake in the oven for about 1 hr 15 mins, until their skins are crisp and they are completely tender when prodded and poked.
  2. While waiting for the potatoes to cook, gently fry the diced onion in a knob of butter and a teaspoon of mustard powder for around 15-20 mins until softened and golden. In a separate pan, gently fry the cubed sausage pieces until browned. Combine with the onions to continue cooking gently. Then add the chopped bacon and fry until cooked and brown. Again once cooked, combine with the onions and sausages and mix.
  3. Halve each potato lengthways (watch out, they will be hot). Scoop out most of the potato into a bowl, leaving a potato skin shell with a thin layer of potato, this will help keep the skins as one piece and not break. In the bowl, crush the potato with the remaining butter. Season with salt and pepper.
  4. Fold through the onion, bacon, sausages and three-quarters of the cheese. Spoon back into the potato shells and top with the remaining cheese.
  5. Place baking tray back in to the oven for 10-15 mins, until the cheese melted and golden.

And there you have it my super yummy, warming Bonfire Night Loaded Baked Potatoes. Perfect for this time of year, when those cold winds blow on a dark evening.
