Brie, Bacon & Cranberry Filo Bites
Day 18 - Evening Folks! When it comes to the festive season I have always loved the sweet treats and lots of chocolate. But as many of you know, I'm a cheeseaholic so any recipes that are cheesy and festive have my name all over them.
Delicious and easy bitesize brie and bacon bites with cranberry all inside a filo basket are a delicious snack for the festive season!
To make these little baskets of joy you will need...
Ingredients
- 3 sheets filo pastry
- 50g butter (melted)
- 1 tsp wholegrain mustard
- 70 g cranberry sauce
- 175 g brie
- 100 g bacon
Method
- Preheat the oven to 170C Fan and grab a cupcake tray.
- Take one sheet of the filo pastry, cut into strips then into squares.
- Take one square of the pastry and brush it with a little of the melted butter, layer another and repeat until you have stacks of 3 filo squares. (placing each at a slight angle to the one underneath to form a sort of star shape).
- Push the stack of pastry squares into one of the holes of the cupcake tin to make an empty pastry case. Repeat with the remaining pastry until all 24 holes are filled.
- Add a little wholegrain mustard to the bottom of each tart and then follow by adding a smidge of cranberry sauce to each one as well.
- Cut the brie into small pieces and place into each pastry case. Be careful not to overfill each tart as I know it's tempting to cramp it full.
- Bake for 10–12 minutes until the cheese melted and the pastry golden-brown. Leave to cool in the tin for a couple of minutes before removing carefully and serving.
So there you have it, my Mini Brie, Bacon & Cranberry Filo Bites. Perfect for this time of year. I have to admit, I enjoy making these little bites throughout the year as little snacks. Why not try dotting the tops with a tiny amount of wholegrain mustard, or adding a little more cranberry sauce and top with a few strips of bacon.
