Christmas Shortbread

Day 20 - Who here likes shortbread? Who here likes mince pies? Who here has ever thought of combining the two together to create a delicious little festive treat which will be sure to delight family, friends and guests over the Christmas period? No me either, that was until I made a HUGE mistake while making my all butter shortcrust pastry and it turned into shortbread instead. Not wanting to waste the mixture I threw caution to the wind and thought why not give it ago..


So sandwiching my ever so slightly boozy mincemeat mixture between two rich, buttery slabs of shortbread is not only mouth wateringly good, but also quick and easy to make.

To make this tasty little snack you will need...

Ingredients

  • 300g Plain Flour (plus a little extra for dusting)
  • 200g Butter (chilled and cubed)
  • 100g Caster Sugar (a little extra for sprinkling)
  • Pinch Of Salt
  • 1tsp Cinnamon
  • 500g Mincemeat

Method

  1. In a food processor blitz together the flour, sugar, salt, cinnamon and butter until it has a sand like consistence.
  2. Line a baking tin (I used and 8"x8") with parchment paper and tip half the mixture in. Press down firmly so the shortbread mixture is really compact and level.
  3. Next, spread your mincemeat over the shortbread base so that it's evenly distributed.
  1. Pour over the remaining shortbread mixture and press down firmly. Be careful not to be to aggressive here are you don't want the mincemeat to come through the top.
  2. Bake in a 170'c pre heated over for 25-30 minutes or until slightly toasted in colour.
  1. Remove from the oven and place on a cooling rack. Sprinkle the top with a little caster sugar and leave to completely cool.

So there you have it, my accidently Christmas Shortbread. Perfect for this time of year. Perfect to eat on it's own or warm up slightly and enjoy with a generous helping of vanilla ice cream or clotted cream. Not going to lie, I think I might make these again this evening.
