Mother's Festive Sausage Rolls


Day 9 - Do you ever have those days where you simply crave a food? I know I sure do and today was one of those days. I craved my Mothers Festive Sausage Rolls. The weather was cold and miserable, work was headache worthy and I wanted something hot, sweet, savoury and flavourful for dinner which took little time to prepare and cook that I could snuggle down with and watch a movie.

These beautiful sausage rolls are not only quick and east to make but taste amazing too!

To make them you will need...

Ingredients

  • Short or Puff Pastry
  • Sausage Meat (I use my local farm shop)
  • Sage & Onion Stuffing Mix (again you can use any flavour you prefer)
  • Cranberry Sauce
  • Salt
  • Pepper
  • Egg (beaten)

Method

  1. In a bowl add the sausage meat, seasoning, half the stuffing mix packet, half a jar of cranberry sauce and mix until well combined.
  2. Cut pastry in half length ways as we are only going to need 1/2 for these sausage rolls.
  3. Place the meat along the long side of the pastry in the centre. This is where you can have as little or as much filling as you wish... I always want a decent amount of filling so go all in.
  4. Brush along one of the long sides with a little beaten egg making sure you reach up to the filling.
  1. Fold the pastry over the top of the filling and seal with your finger, pressing and pushing gently back against the meat to seal it in.
  2. Using a fork press the prongs in along the lip/edge of the pastry to make sure they care completely sealed.
  3. Cut into your desired size. I go for around 10cm pieces which is just the right size for a hearty snack. Once you've cut them place them onto a lined baking tray
  4. Wash with a little more egg and pop in the over for 20-25 mins at 170c until golden brown and bubbling.

So there you have it, my Mothers Festive Sausage Rolls. The ultimate comfort food for cold, wintery days like today, when you just crave a certain food. These can be enjoyed straight from the oven, just warm or are just as delicious when cold.
