Bite-Sized Fun: Easy Fish & Chip Bites Recipe

Day 22 - Just 3 more sleeps to go! Who else is excited for the big day? I sure know I am. I think I'm 95% ready just the last few touches to make Christmas eve and of course get all the veggies prepared for the lunch but I'd say I'm actually done! Which for me is great as I've been known to still be rushing around like a headless chicken on Christmas Eve.


Every year without fail (COVID year as an exception) my parents have hosted a Christmas Eve party for all our family, friends and neighbours. These have been happening for as long as I can remember, but what else I remember is the insane spread of food that my Mother and Grandmother use to put on. Tables lining the hallway, filled with plate after plate of so many wonderful foods. One of those plates were piled high with Fish & Chip Bites.

These adorable and scrummy bites are so simple and quick to make, you can have them ready to eat in less than 10 minutes. A chunky golden chip base, white flaky cod chunk all coated in a golden delish beer batter.

To make these Fish & Chip Bites you will need...

Ingredients

  • Chunky Cod Fillet
  • Chunky Chips (you can use shop bought like myself or make your own. Either way these need to be cooked and cooled before hand)
  • Self Raising Flour
  • Salt
  • Can Of Beer

Method

  1. In a big bowl add your self raising flour, beer and a pitch of salt. Whisk up to make the batter, making sure to get all the flour around the sides. Once thick and a batter consistency, pop in the fridge to chill while we prepare the fish.
  2. Cut the fish into bite size pieces and lay on top of one of the chunky chips that have already been cooked and cooled.
  3. Next we need to start heating our oil up ready to fry once we have dipped out bites into the batter.
  4. Remove the batter from the fridge and give one final whisk before skewering the fish and chip together and dipping in the mixture.
  5. Straightaway, carefully lower the bites into the oil and off the skewer cooking for around 5-6 minutes or until golden brown and crispy.

So there you have it, my Fish & Chip Bites. Perfect for Christmas Eve parties or as a quick snack. Why not serve it up with a tarte sauce dip or go all out and have with a pot of mushy peas!
