Easy Holiday Treat: Mince Pie Crumble Bars
Now I'm not a fan of mince pies in the slightest, but I absolutely love making them and the smell of the mincemeat. On one cold Christmassy evening I was sat scrolling though TikTok and come across a Christmas flapjack, which was essentially a basic flapjack with all the dried fruits and spiced chucked in for good measure Queue light bulb moment, why don't I make a flapjack mixture base, mincemeat middle and a flapjack crumb topping.
These delicious Mince Pie Crumble Bars are the perfect tea time treat to have with a cuppa or even served as a desert with a dollop of cream or ice cream.
To make this recipe you will need...
Ingredients
- 175 g Rolled Oats
- 200 g Plain Flour
- 150 g Light Brown Sugar
- 175 g Butter (cold & cubed)
- 1/2 tsp Baking Powder
- Jar Of Mincemeat (I used a jar of pre-made but you can make your own if you have time)
Method
- Preheat the oven to 180 and line a 8x8 square tin with greaseproof paper.
- In a large bowl, add the rolled oats, plain flour, sugar, baking powder and unsalted butter.
- Rub the ingredients together, until the mixture resembles fine bread crumbs and there are no large lumps of butter left.
- Pour 500g of the mix into the lined tin and press down firmly.
- Pour the mincemeat onto the base crumble and spread evenly.
- Sprinkle over the rest of the crumble mix
- Bake the bars in the oven for 35-45 minutes, or until golden.
- Leave the bars to cool fully before portioning. (once cooled slightly, I put mine in the refrigerator to help firm them up a bit more).
And there you have it my super yummy, Mince Pie Crumble Bars. If you like mince pies but fancy something a little different, these sweet treats are definatly for you. Why not add a little bit of lemon or orange zest to the mixture to have a little tangy hit.
