- 100g garlic & herb cream cheese (like Boursin or supermarket own)
- Salt and freshly ground black pepper
- ½ tsp dried thyme or a few fresh sprigs (optional)
For the pastry:
- 320g ready-rolled all-butter shortcrust pastry (or homemade if you prefer)
- 1 medium egg, beaten (for egg wash)
Equipment You’ll Need
- 1 large frying pan
- 1 large saucepan or steamer
- A 23cm pie dish or deep tart tin
- Pastry brush
- Knife and chopping board
Method
Step 1: Prepare the Potatoes
Peel the potatoes and chop them into uniform pieces so they cook evenly. Place the potato pieces into a large saucepan, cover them with cold water, and season with a pinch of salt.
Bring the water to the boil over medium-high heat, then lower the heat and let the potatoes simmer gently. Keep an eye on them—cook until they can be easily pierced with a fork. This usually takes 15-20 minutes depending on the size of the chunks and the potato variety.
Once tender, drain the potatoes thoroughly using a colander. Transfer the potatoes back into the dry pot to let residual heat remove any lingering moisture. Set aside.


Step 2: Cook the Leeks & Onion
While the potatoes cool slightly, heat the butter in a large frying pan over medium heat. Add the sliced leeks and onion, and cook gently for about 10–12 minutes until soft and starting to caramelise.
Add a pinch of salt, pepper, and thyme (if using). Once fragrant, remove from the heat and let cool slightly.



Step 3: Mix the Filling
In the pan, combine the leek mixture and the cream cheese until well coated.
While the potatoes are still warm, add the butter and milk to the saucepan. Use a potato masher to blend them into a smooth mash.
Mix the mashed potatoes into the leek mixture. Add the grated cheese (reserving a little for the top) and stir until smooth.








Step 4: Assemble the Pie
Preheat your oven to 200°C (180°C fan) / Gas 6.
Unroll your pastry and line your 23cm pie dish, trimming any excess. Gently press the pastry into the corners.
Spoon the potato and leek mixture into the dish. It should come up to just below the rim. Top with the remaining grated cheddar.




Step 5: Bake
Bake in the preheated oven for 35–40 minutes, or until the pastry is deep golden and crisp.
If the pie browns too quickly, cover it loosely with foil for the last 10 minutes.
