Craving Comfort: Easy & Delicious Cheese & Pickle Sausage Rolls

Ever have one of those days where you just need a particular kind of food? Today was that kind of day for me. The weather was awful, work was a nightmare, and all I wanted was something warm, savoury, and satisfying for dinner. Ideally, it would be quick and easy to make so I could curl up with a movie.

Enter these incredible Cheese & Pickle Sausage Rolls! They're not only delicious, but they come together in a flash.

Ready to indulge? Here's what you'll need:

Ingredients

  • Puff pastry (store-bought works great!)
  • Sausage meat (support your local butcher if you can!)
  • Cheddar cheese (cubed)
  • Pickle relish (your favourite brand will do)
  • Salt
  • Pepper
  • Egg (beaten for an egg wash)

Instructions

  1. Preheat your oven to 170°C (325°F). Line a baking sheet with parchment paper.
  2. In a bowl, combine the sausage meat, salt, pepper, a generous amount of pickle relish (3-4 heaped tablespoons), and as much cheese as your heart desires. Mix well.
  3. Unfold your puff pastry and cut it in half lengthwise. You'll only need one half for this recipe.
  4. Spoon the sausage mixture along the center of the long side of the pastry. Be generous, or add a little less depending on your preference.
  5. Brush one long edge of the pastry with the beaten egg wash.
  6. Fold the pastry over the filling and seal the edge by gently pressing and pushing it against the meat.
  7. Use a fork to crimp the sealed edge, ensuring a tight closure.
  8. Cut the pastry roll into pieces of your desired size. Around 10cm (4 inches) is perfect for a satisfying snack.
  9. Place the sausage rolls on your prepared baking sheet and brush them with the remaining egg wash.
  10. Bake for 20-25 minutes, or until golden brown and bubbly.
