Slow Cooker Balsamic Honey Belly Pork

This dish is melt in your mouth tender, delicious, and infused with a tangy glaze. Slow cooking it really locks in all the amazing flavours and will be a hit for Sunday Lunch or a Dinner Party

If there is anything left over from this recipe (which I highly doubt it's that good) it keeps well in the refrigerator for up to 3 days in an airtight container. Simply reheat gently in the microwave. To loosen the sauce, just add a couple drops of water and give a good stir.

To make this recipe you will need...

Ingredients

  • 1KG Belly Pork (this can be either slices or a belly pork joint)
  • Salt
  • Pepper
  • A Pinch Of Cayenne Pepper
  • Splash Of Oil

For the Honey Balsamic Glaze

  • 60ml Chicken Stock
  • 60ml Balsamic Vinegar
  • 3/4 tbsp Honey
  • 3 Garlic Cloves (minced)
  • Salt
  • 1 tsp Oil
  • Pepper

Method

  1. With a sharp knife, score the pork belly skin diagonally in a diamond pattern. Season with salt, pepper, and Cayenne pepper, rubbing it well into the skin.
  2. Heat oil in a large pan over a medium heat. Add the pork belly, and cook for 3-5 minutes until crisped and golden brown. Lightly oil the bottom and sides of your slow cooker or if your like me and have these fancy liners now's the time to prep your slow cooker and then transfer the pork into it.
  3. In a jug, combine the pre made chicken stock, balsamic vinegar, honey, garlic, olive oil, and black pepper.
  4. Drizzle the mixture over the pork belly. Close the lid and cook on high for 4 hours or on low for 7 hours if going out.

When the pork is cooked, serve with rice, noodles or even mash potato and enjoy!
