Cheese & Leek Herby Bread

There’s something so special about homemade bread. It fills your kitchen with the kind of warm, yeasty aroma that makes you instantly relax, and somehow everything feels a little slower, a little simpler.
Today, we’re baking a Cheese and Leek Herby Bread, inspired by the delicious flavours championed by Amy Sheppard — who always manages to make hearty, homely food feel completely irresistible.

This bread is tender, cheesy without being heavy, dotted with buttery-soft leeks, and finished with a scattering of fresh herbs that lift every bite. It’s perfect served warm with a slather of salted butter, alongside a steaming bowl of soup, or simply on its own as a treat.
It’s proper cosy kitchen stuff — and yes, it’s easier than you think.

Ingredients (Serves 8–10 slices)
- 500g self raising flour
- 1tsp baking powder
- 1tsp dried parsley
- 2 medium leeks, washed and finely sliced
- 200g mature cheddar cheese, grated
- 1 tbsp chopped fresh garlic chives
- 1 tsp cracked black pepper
- ½ tsp salt
- Garlic oil
- 200ml water
- Milk (for brushing)
Method
- Mix the dry ingredients: In a large mixing bowl, combine the flour, baking powder, parsley, chives pepper and salt.



- Cook the leeks: Add a drizzle of garlic oil in a frying pan over medium heat. Add the sliced leeks with a good pinch of salt and pepper.
- Sauté gently for 8–10 minutes, stirring often, until the leeks are soft, sweet and just starting to caramelise.

Cool: Set the leeks aside to cool slightly. You want them just warm or room temperature before mixing with the cheeses — otherwise they might melt everything prematurely!
- Into the dried ingredients bowl add the butter or margarine and mix until it disappears.


- Next, combine the cooled leeks with the grated cheddar, and another little grind of black pepper. Stir well to combine into a herby, cheesy, aromatic mixture.


- Once combined, add the water slowly and mix until you have a smoothish dough mixture.

Shaping
- Pour the mixture out onto a lined baking tray. Press it down until you have a thick circle.


- Brush the top of the loaf with a little milk.
- Bake: Pop the loaf into the hot oven and bake for 30 minutes, until golden brown, cooked through and irresistible.

Cosy Tip -: If the top is cooking too quickly, just cover it on foil for the last minutes of baking.
- Cool: Let it cool slightly on a wire rack — if you can resist — before slicing.

Serving Suggestions:
- Warm slices slathered in butter for breakfast.
- Toasted with tomato soup or leek and potato soup.
- As a side to roast chicken or a big hearty stew.
- Cubed up into bite-sized pieces for a rustic party platter.

- Swap the cheese: Try Red Leicester, Double Gloucester, or a peppery blue cheese if you like a little more punch.
- Boost the herbs: Add rosemary, oregano, or basil for a more Mediterranean vibe.
- Make it spicy: Add a pinch of chilli flakes into the leek mixture for a subtle heat.
- Use up leftovers: Add small chunks of cooked bacon or ham into the filling for an even more indulgent bake.
